I love La Jolla and it's considered the "Jewel by the Sea". And within this wonderful Jewel, I stumbled across a hidden diamond that sits beautifully nested on prospect​ street, which is La Jolla Village's precious strip.
This diamond "Aquavite" has taught me and my family that, throughout the sum of 20 years eating Italian cuisine, that I really know little or nothing about true Athentic Italian food. The presentation, taste, textures, quality, and the passionate service experience that Italians are so eager to share. I have been tanted and scorned by the Buca di beppos, The old spaghetti factory, and Olive Garden, of America, to name a few.
Which ofcourse, any True Italian will tell you that the food at these famous corporate Italian food chains are pretentiously not Italian, but Italian/American. And was made more suitable for any American's pallet. If I knew then, what I know now, perhaps you would say I've been ignorant, when we all have been tricked and decieveed.
I made reservations for a Thursday night dinner to make up for all the time I've haven't spent with my lady and I wouldn't have traded my eats and experience for any other restaurants in La Jolla. Everyone who fancies La Jolla knows, that restaurant competition is stiff and La Jollaians desires for dinning experiences run deep.
Our "Insulate" began with the Caprese Do Bufala Tartara which comprised of the freshest Italian buffalo mozzarella, vine ripped tomatoes, hand picked sweet basil, and the finest extra virgin olive oil on can produce.
This was complemented with a "Insulate" of Tartara Di Tonno that has sashimi grade Ahi Tuna, avacodo, red onion, extra virgin olive oil, and crispy ciabbata crostini and their freshly baked in house Italian bread with a passion fruit butter spread that was extremely unique and delisciousy amazing. All items stood up terrific in quality and taste and had an appealing presentation.
Moving forward we eagerly dove into our Primo Piatti which for myself I had the Cinghiale E Rosmarino that consisted of braised wild boar, rosemary scented risotto, and parmigiano reggiano that tantalized my tastbuds with amazing aromatic scent's and wholesome quality taste, you knew it was certain this dish was made with passion and love.
In addition, my lady fancied the Fettuccine Allo Zafferano which with deep quality of Pacific shrimp, creamy saffron sauce, organic egg Fettuccine, Italian squash, and sliced almonds. This dish was turly, madly, deeply supreme in quality, taste, and creative presentation. It's flavors and richness represented simplicity and craftiness with delicious savory and style. It deserves a standing ovation.
We buttoned up our evening with dessert immersing and fixing our pallets desires in need of their Profiteroles homemade pastry puffs filled with custard and belgian chacolate sauce and Tiramisu with homemade lady fingers dipped in coffee and Grand Marnier sauce that put all other Italian restaurants to shame. If an Italian restaurant cannot produce an amazing Tiramisu, they should be shut down permanently. Aquavite is a Gold deliverer of this homemade delight of chocolate, all fresh organic ingredients, farm to table, and lactose free taste of pristine. Their dessert is magnificently hand crafted and delisciousy bountiful with superb quality leaving me in awe.
I am grateful for such a unique and authentic Italian cuisine experience. My tastbuds are forever in debt to Aquavite. I highly recommend this dining experience to couples, families, and corporate parties. If your looking for a Amazing Italian cuisine experience that will give you bounce in your step, spring in your soul, perfection on your pallet, and love in your belly's​ heart. Seek Aquavite, and ye' shall find, a 5 star experience in Atmosphere, taste, textures, quality, and overall service.

Great Italian comfort food. Ownership will come out and talk to you and make sure all is well. Great ambiance, it's a hidden gem in the heart of La Jolla.
All food was deliciousthe ravioli was the best we have ever had! Authentic Italian. Ricotta is flown in from Italy. Service was attentive and very friendly. The view was amazing. All pasta is made on site, bread and butter are made fresh daily. Excellent wine list. The owners were so generous and friendly. Would highly recommend! We felt like we were in Tuscany!
I have lived in Italy for 30 years and love to cook Italian. I rarely go out to Italian restaurants unless I crave a pizza. That's because I have not found a restaurant that offers real authentic Italian dishes. I can do better myself. Ultimately I stumbled upon Acquavite and had dinner overlooking the ocean. Beside being impressed with the location I finally found what I have been looking for in years. An Italian chef/owner from Tuscany that still owns a restaurant there and cooks exactly the same way with the same fresh ingredients he uses in Italy. His wife makes fresh pasta, bread and original desserts every morning and they are both proud of maintaining their traditions. I felt I was back in Italy again!
I finally found a place I feel comfortable referring friends to.

The food is presented so beautifully, five start quality. Then on top of that the services was great. Our waiter made great suggestions on what to order. Finally the food was absolutely deliscious!!
PS the view from the patio is gorgeous!
