    We stayed in Monaghan during the Taste of Monaghan food festival as I was booked to do cooking demos on the main stage on the Friday and Saturday.
    The guy who owned the place we stayed in gave us a lift into town as it was a bit of a drive from Monaghan itself. During the drive in he recommended an Indian restaurant in town called Eastern Balti which is just across the road from Andy's bar. He also recommended Andy's for food and drinks.
    My colleague doesn't get out much due to being mum to 3 young children so I didn't object when she expressed her preference to try the Indian.
    We arranged to meet Chef Joe Shannon of TV3 Ireland in Andy's for a drink after our meal so popped across the street when we finished what was a lovely meal.
    The exterior didn't appeal to me at all, if I am honest, I wouldn't have chosen to go here if it hadn't been recommended to me.
    The interior is nice, lots of dark wood and wine leather on the seats. Everything was spotless and looked pristine.
    The staff were well kitted out in formal uniforms which I thought was a bit much for a bar but after discovering it is more a restaurant than a bar I understood the uniform choice and approved of such.
    When we arrived Joe was waiting at the bar enjoying a pint. We joined him and were quickly greeted with a warm friendly smile from a uniformed gent called Kevin which was clearly embroidered into his neat waistcoat.
    I was asked if I liked gin and after a very filling meal earlier it was exactly what I fancied.
    Kevin's knowledge of gin along with his selection is excellent. I know of a few nice gins but nothing compared to Kevin's knowledge. His passion for gin showed as he explained each one to me, giving a little taster of any I showed an interest in.
    Our evening was really enjoyable due to the lovely company and made all the better because of how much I learnt about gin from our host.
    Joe and I, being chefs, we're given a tour of the lovely restaurant upstairs as well as the kitchen. We were also shown something which very much impressed two chefs who have been in the game a long time. These guys actually dry age months worth of beef themselves in a cold room designated specifically for the job. Each shelf was filled with bone in striploins, each of which was labeled with dates as is essential and a legal requirement. The cold room was spotless, not one speck of blood or dirt was to be seen. This was impressive for a designated meat storage coldroom.
    I was very surprised to find a chef working away making cheesecakes when we entered the kitchen. It was just past midnight and service had obviously finished hours earlier. Yet here was a chef, we later discovered he is Kevin's brother and son of the owner, making cheesecakes for tomorrow's service. Both Joe and I could clearly see he was exhausted as we have been there many times ourselves. He chatted away with us and happily gave us a tour of his well equipped kitchen. Sean, the chef, came across as someone who is very passionate about his food. I really would have loved to have eaten here and will actually take a trip to Monaghan just to do so in the not too distant future.
    Overall our night in Andy's was thoroughly enjoyable for many reasons and one I shall look back on as being one of the best I have ever had anywhere.
    I very highly recommend you both dine and drink here the first chance you get.
    The toilets were spotless, I couldn't find fault. They smelled fresh throughout the evening and well into the night, even with an 18th birthday party going on in the restaurant.
