Soup is an affordable way to eat in bulk. Making a big batch of soup can last you a few meals. Great way to get in your veggies too! Be sure to choose low sodium broth and organic when you can. Bone broth is a good option too (non-vegan)
This week we have a vegan creamy carrot & apple soup with just a few ingredients. The creaminess comes from coconut milk rather than heavy cream and it is delicious!
Filled with vitamin A from the carrots this is a great meal, side dish or appetizer for the upcoming holiday season.
