Ices Plain & Fancy is St. Louis' Nitro Ice Cream Parlor - Serving the finest quality ice cream, flash-churned to order using liquid nitrogen. Visit us in the historic Shaw Neighborhood of St. Louis to taste our Classic Nitro Ice Cream, Fancy Ices, Boozy Ice Cream Cocktails, Non-Dairy Offerings, Seasonal Sorbets, Floats, Soft Serve, and more!
Flash-churning our Nitro Ice Creams at -321 degrees is not only exciting to watch, but also forms very small ice crystals for a supremely smooth texture that can’t be duplicated with traditional slow-churning methods. We also have very little “overrun” – an ice cream term for the amount of air whipped into the mixture. The end result that emerges from the nitro cloud? A silky, dense, decadent treat that you will never forget!
We use only the finest ingredients, from our premium ice cream to our rich Belgian Chocolate. This assures that in addition to the nitro process being fun to watch, the end result is a product of the highest quality. Partnerships with local farmers keep our seasonal offerings as fresh as possible. Our chef balances and crafts each fl avor with a

This International Women's Day, we're giving it up for the "Queen of Ices" herself, Agnes B. Marshall!
The woman who inspired it all, Mrs. Marshall was a pioneer of her time (1855-1905) in her work with ice cream and frozen desserts. Author of the book "Ices Plain and Fancy: The Book of Ices," she is credited with first suggesting the use of liquid nitrogen to make ice cream! Her portrait hangs in our lobby reminding us of what hard work and innovation can achieve, even if the odds are against you.
