利休之名源自於日本戰國時代茶道始祖-茶聖千利休,他的精神是追求精緻細膩、一絲不苟、主客的一體感。
茶道自古代歷經日本近代化的黎明期明治維新延至現代,始終保持原有的精神,這也是我們「利休壽司割烹」日本料理遵遁的方向。
利休結合了関東江戶前壽司的風味,及明治維新引進的歐洲文化,具體呈現在店內的裝潢細節中,以日本茶的綠色為主調、一盞歐洲進口的水晶吊燈、牆壁四周鑲崁的圖騰、以及師傅們純熟的手藝,讓饕客們身在店內、一邊品嚐精緻的日式料理,斟上一壺溫冷合宜的日本地酒,體驗一份高貴不貴的頂級享受。
