I suggest that you don’t leave Jordan without staying in a beduin camp at Wadi Rum. Few times I have seen so many stars. To be at a desert breakfast and dinner were good. Dinner specially as it was cooked in the sand. Be ready for a climbing and hiking tour. One of the best experiences in Jordan.
