Benvenuti a Casadonna, complesso polifunzionale dedicato al culto del bello e alla ricerca del gusto. Il monastero del '500, immerso nel verde di Castel di Sangro (AQ), è circondato dalle montagne del Parco Nazionale d’Abruzzo, da una vigna sperimentale, un frutteto e un giardino di erbe aromatiche e spontanee. Inaugurato nel 2011 dopo un restauro imponente voluto dallo chef Niko Romito e dalla sorella Cristiana, ospita il ristorante Reale (3*** Michelin), un boutique hotel con 9 stanze e la sede della scuola di cucina professionale “Niko Romito Formazione”. Antichi materiali e un design essenziale qui si mescolano senza retorica, per creare un ambiente di massima suggestione. E pace.

    A composition of colours and structures for “Watermelon and tomato”: the taste of the watermelon is enhanced through a work on its structure. The tomato, apparently raw, is marinated and steamed. The final dish is complex: the taste is acid, sweet, savory, the aroma is very intense lending notes that vary from marjoram to tarragon, from lemon to rosemary.

    Yesterday evening our #sommelier Giovanni Sinesi has received the International Gusto Divino prize, this year at its 12th edition in Castelbuono (Sicily). An acknowledgment “for all those people who contribute to spread the wine and food culture through their work and passion”. The DiVino Festival Castelbuono Premio Gusto DiVino is one of the most important international events dedicated to the world of wine.

    The soul of Reale restaurant, Niko and Cristiana work together since 2000. In their younger years, Niko studied Business and Economics and Cristiana Languages. Then, unespectedly, they found themselves following a common path that led to the opening of Restaurant #Reale first and #Casadonna, their boutique hotel, a few years later. Two brothers, one dream.

    There was a time when this was just a lonesome garden. Now there is our beautiful terrace where you can relax after our gourmet breakfast, enjoying the early sunlight and the fresh air of the mornings breathing the scent of lindens, or having an aperitif at sunset before dinner, admiring the panorama with the Meta mountains on the background.

    Summer at Casadonna. The vineyard is luxuriant again, roses have fully blossomed and shape a vivid red path that leads guests to the main entrance and a breath of fresh air comes from outside, reminding that the nature has completely woken up.

    In Sulmona Confetti are produced since 15th century, but at #Reale we wanted to make a new version of them. Our “Confetto” has to be eaten vertically: a confetto foam covers the almond layer, which is placed over a wafer of fondant sugar. At the base, a confetto gel made with the broth obtained by transforming the foam. It’s a very original reconstruction of one of the most famous Abruzzesi sweet, a new entry in our #menu.

    "Roasted eggplant, tomato and peach caramel" represents an in-depth research and celebration of eggplant: the texture, the bitterness and the natural spice. The eggplant is glazed with its own syrup and topped with a thin layer of toasted sugar and chili pepper. The cube is served with rosemary extract, accompanied by a peach reduction and a natural concentrate of tomato. The flavors find their balance in the contrast between sour, bitter and sweet.

    #Reale’s team performance tonight at The Ritz-Carlton, Wolfsburg. A very special dinner to celebrate 10 years of #Michelin’s highest rate of excellence assignment to the restaurant Aqua, Wolfsburg. The menu is a selection of some classic dishes of #NikoRomito’s cuisine like “Capellini pasta and tomato” and “Essenza" and a few very new dishes from Reale restaurant such as “Gratiné cauliflower” and "Smoked beef tenderloin with potatoes".     The terrain is perfect. After the autumn preparation, now we can start planting new vegetables. This year our gardens are raising further: tomatoes, swiss chard, green beans, courgettes, salads, peppers, radishes, and many others. Flowers are blossoming from a special type of garlic (the red one, coming from the near Sulmona): they can be eaten alone, and are an exquisit tidbit.
