A walk inside the old town or “palia poli” as commonly known by the locals, will definitely persuade you of its historic and culture significance. Lose yourself in this travel in time by discovering the residuals of many different cultures and follow the Street of the Knights "odos Ippoton" to the Grand Master Palace also known as the "Kastello", one of the few examples of Gothic architecture in Greece. Built originally by the Knights of St. John and one of the best-preserved medieval towns in Europe, it was designated in 1988 as a UNESCO World Heritage Site.

PAN-FRIED SEA BASS WITH BLACK EYED PEAS SALAD
Pan-Fried Sea Bass (For 4 persons)
...Ingredients: • 8 skin-on fillets sea bass • 1 minced garlic • salt , ground black pepper • 70 gr olive oil
Instructions: • Sprinkle the fish on the fleshy side with the garlic, salt and pepper, and set aside. • Place a large skillet over medium-high heat, add the oil, and then place the fish skin-side down. Cook for 4 minutes then carefully flip and cook for another 3 minutes. Place the fish on a paper-towel-lined plate to remove any excess fat, then serve.
Black eyed peas salad Ingredients: • 300gr black eyed peas • Juice from 1 lemon • 2 small fresh onions, very thinly sliced • 20gr chopped fresh dill • 1 tomato, diced • 1/2 medium red onion, finely chopped • 1 small red bell pepper, finely chopped • 20gr tablespoons chopped fresh parsley leaves • Salt and freshly ground black pepper to taste • 30gr extra virgin olive oil to taste
Instructions: • Rinse the black eyed peas. Soak in to the cold water for one day • Cooked in low fire for 35 min until its ready soft. Drained them and set aside. • Squeeze the juice from into a medium bowl. • Add the rest ingredients to the bowl and mix well. Let sit for 5 minutes.
In the end serve the fish hot on the cold salad.
