Jicama is a round root vegetable native to Mexico, as well as Central and South America. The plant, also called yam bean, is a tropical legume that grows aggressively on vines that can reach up to several feet in diameter. The texture of jicama’s root is likened to a potato, and is firm as a pear, but the taste is sweet and starchy - think of a cross between a water chestnut and an apple. The skin, leaves, stems, pods and seeds of Jicama should be discarded before cooking as they content a toxin. Chopped, cubed, sliced into fine sticks, raw or cooked, jicama is versatile and great in stir-fries, salads, slaw, soup and with other veggies and fruits like oranges, apples, carrots and onions, as well as meats and seafood.
Once purchased, keep jicama unpeeled in a plastic bag in the refrigerator for up to two weeks.
Fun fact: A favorite Mexican recipe is chilled jicama slices sprinkled with chili powder, salt and lime juice.

Do you know quince guys?! It’s a fall fruit that grows like apples and pears, but its similarities end there. The quince fruit is knobbly and “ugly”, with an irregular shape and often a gray fuzz - especially when the fruit has been picked underripe. The ripest, nicest quince will have a golden tone. Evan ripe fruit doesn’t taste very good raw. It has an extremely tough and spongy flesh, which is difficult to cut up.
If you leave a quince on a sunny windowsill it will slowly release a delicate fragrance of vanilla, citrus, and apple into your kitchen.
When you stew quince in sugar and a little water or wine, it becomes not just edible but delicious sweet, delicate and very fragrant.
Once the quince is cooked, it’s soft and tender, usually with a really lovely syrup from the cooking process. You can eat the fruit straight like this, or pour it over yogurt, or bake it into a tart. You can make a sweet, spicy paste out of it that is magnificent with cheese. Or an amazing sorbet and other stunning desserts.

Baby bok choy aka baby Chinese cabbage. It has crisp but tender ribs that can be seared, sautéed, and steamed without losing the crunchy texture. Plus it’s high in calcium, potassium, folate, vitamin C, and vitamin A!
Beefsteak tomatoes, aptly named for their large size and meaty texture. They have a classic tomato flavor, however, depending upon the variety, they can also be sweet to the taste. The size of the Beefsteak tomato makes it ideal for sandwiches and burgers. Try them in a stacked salad, sliced lengthwise and layered with avocado and mozzarella. You can roast slices of Beefsteak tomato with olive oil, salt and pepper, and then add to soups and sauces; roasting enhances their natural flavor. Like other tomatoes, Beefsteak tomatoes should be stored at room temperature until ripe.
Watermelon radish is an heirloom variety of daikon radish and a member of the mustard family. This root vegetable originated in China where it is called Shinrimei (or Xin Li Mei). It’s also called the Red Meat or Rooseheart radish. Watermelon radishes are juicy, crunchy, slightly sweet but with a hint of peppery goodness. They are milder in flavor than the traditional red radish but much larger in size. Watermelon radish may be enjoyed raw, pickled, roasted and even added to vegetable soups. It is really nice shaved onto salads and tossed with vinaigrette. Or sliced thinly and added to open-faced sandwiches for maximum impact. @ Nature's Fresh
Carrots come in several types that vary in size and shape, as well as a range of colors, from the classic deep orange to purple, white, yellow, and red. And guess what? We have all of them! 🥕
🤓Fun fact: microgreens, also known as "vegetable confetti," are sometimes confused with sprouts, the germinated seeds that are eaten root, seed and shoot. Microgreens, however, include a variety of edible immature greens, harvested with scissors less than a month after germination, when the plants are up to 5 cm tall. The stem, cotyledons (or seed leaves) and first set of true leaves are all edible.

Eddo. 🥔 This hairy looking tropical tuber is part of the taro family. It can be cooked and eaten the same way as regular potatoes or yams. But when the eddo is cooked it has a slightly sweet, chestnut flavour and silky smooth texture that makes our everyday potato seem awfully boring!

Kabocha squash aka Japanese pumpkin or Kent squash. Kabocha has a coarse, deep-green skin that gives way to tender, reddish-yellow sweet flesh with velvety texture, and plenty of health benefits. If you like pumpkin and sweet potato, then kabocha will quickly become your new favorite this fall. Kanocha is great for frying, roasting, steaming and baking.
Topinambur aka Jerusalem artichoke, also called sunroot, sunchoke, or earth apple. The taste is slightly nutty and savory—like a cross between an artichoke heart and the best potato you've ever had. 😉 Topinambur can be cooked in the same way that you would cook any other root veggie. They can be steamed, boiled, roasted, fried, grilled, mashed and they can also be eaten raw! Grated or thinly sliced, they add a bit of crunch and texture to a salad.
Bok Choy aka Chinese cabbage 🍃 Bok choy is loaded with good nutrition. It is high in calcium, potassium, folate, vitamin C, and vitamin A. In fact, one cup of raw shredded bok choy has only 9 calories, and one cup of cooked bok choy has only 20 calories!

Thai basil. Widely used in Asian cuisine. Its flavor, described as anise- and licorice-like and slightly spicy, is more stable under high or extended cooking temperatures than that of sweet basil. Thai basil has small, narrow leaves, purple stems, and pink-purple flowers. @ Nature's Fresh
Bambo shoots. Bamboo shoots or bamboo sprouts are baby bamboo plants, which just came out of the ground. Their flesh is tender and aromatic, mildly sweet, mildly bitter. It tastes a bit like an artichoke heart, and it has tender yet crunchy texture.
‼️Don't eat the bamboo shoot raw as it contains hydrocyanic acid, natural toxins also contained in cassava. You will need to boil the shoots first in order to flush these toxins out and remove any bitterness.

Pearl onions. These cute tiny onions come in yellow, red, and white varieties. They are much milder and sweeter than large bulb onions. These cuties look just like regular onions but are about the size of large grape.
Salicornia Cress, it has a mildly salty taste and a good crunch, which makes it perfectly suited to fish dishes. Its salty taste means you can use Salicornia Cress as a salt substitute in any dish. Because the cress is young, the stems are tender, and you can use the entire plant.

Roma tomatoes 🍅 These are a meatier, less seedy variety of tomatoes. Because they naturally contain less liquid than slicing tomatoes, they are a perfect choice for drying. Sun-dried tomatoes are usually made from Romas. These tomatoes are also sweeter and more acidic than many other tomato variants. This makes them a very popular choice for slow-cooking or simmering down into flavorful sauces for pizza or this Italian meat sauce. Roma tomatoes are also a great choice for canning and preserving. Garden cress 🌱 Micro plant related to watercress and mustard. It has peppery, tangy flavor and aroma. Garden cress is a good addition to soups, sandwiches and salads.

The Carolina Reaper, officially the Worlds hottest pepper 🥵🤯 It was bred for heat and that it is, with an average SHU of 1,641,000 SHU and peaks at 2.2 Million SHU! It is 200x hotter than Jalapeño. Oddly enough this pepper doesn’t just have heat, but excellent fruity flavor to boot. Well, that is before it melts your face off 🔥
Myoga, sometimes called myoga ginger or Japanese ginger. Native to Japan, China, and Korea, myoga is harvested for its unopened flower bud and flavorful shoot instead of its root. The flower buds are slightly larger than thumb-size and they come in striking pinkish-bronze outer layers. Myoga has a very distinctive flavor, with a mild ginger overtone and zesty tang. It has a tender crunchy texture and gives a refreshing taste to the palate. That is why the Japanese believe eating myoga can help boost appetite. They can be eaten fresh or pickled. The easiest way to enjoy myoga is to finely shred the flower buds and use as a garnish in dishes such as sashimi, soups, cold noodles, sushi, salads and in vinegar salads.

Green Peas. A Protein packed star spring veggie to enjoy for good health! Peas are a win - whether you choose pea soup, sprinkle them in a salad, blend them into a smoothie (they’re really sweet once frozen!), use them in a dip, or just cook them into an entree of your choice.
Choclo, also known as Peruvian or Cusco corn (named for the capital city of the Incas). Choclos kernels are larger and chewier and have a starchy, hefty texture, rather than a sweet taste. In Peru, choclo is commonly used in dishes such as ceviche, Tamales, Humitas, sweet pastries, Cancha Salada, breads, soups, Chupes (thick Andean soups), lawas (light soups made with very young corn), or it can be eaten just boiled. 🌽
Sechuan buttons, also known as buzz buttons, electric buttons, and electric daisies. The buds have a grassy, slightly sour flavor that’s accompanied by a pleasant tingling sensation. Aji rocoto pepper may resemble a bell pepper in shape, but underneath the hood it’s one chili that’s full of surprises. There’s a juiciness and a meatiness to this chili – more akin to a tomato than a pepper – that’s set ablaze with surprising heat. The rocoto can top out at habanero level spiciness, and that often catches eaters by surprise. It is very flavorful, light, crisp and fruity. Great for fresh salsas.
King oyster mushroom boast a meaty flavor and firm, chewy and almost resilient texture. It can be braised, broiled, grilled, sautéed, or stewed.
Zallotti Blossom, a decorative sprig with several small purple flowers. It comes from the African basil plant and has a strong flavour of basil combined with mint. It is very decorative in its entirety and when the individual flowers are used. It combines perfectly with Italian or summery dishes, and makes a great addition to a salad or a cocktail.
King Bora (Korean radish), locally grown in Greece 🌱 . . . This wonderful purple veggie is great in soups, tsukemono (pickles), or raw. Use as a oroshi (coarsely grated using a Japanese grater) in sauces used for soba noodles, tempura, and sashimi. The leaves are eaten as well.
