The Black Swan at Oldstead was created by The Banks family who have lived and farmed around Oldstead for centuries. The current generation are so rooted in the surroundings that The Black Swan could only be at Oldstead.

We’re collaborating with Cooper King Distillery 🙌🏼 We’ll be working with them to make a range of bespoke spirits using produce from our garden. After extensive trial distillations, the first of the new spirits went in to production last week. Created using Marigold flowers which we hand pick and hand deliver to Cooper King Distillery in Sutton-on-the-Forest.

WE HAVE OLDSTEAD HONEY 🐝 • It’s been a rollercoaster year for our bees. In January we sadly thought our hives had become inactive, which was quickly proven wrong by Mr Craig our bee expert who found that BOTH our hives had kept themselves going through winter 💪🏻Then most recently our hives swarmed, and once again we thought we’d lost our little Oldstead bees. BUT it appears we must have a lot to offer as they’ve RETURNED! ✊🏼 And not only that, Cosmin, our latest recruit is a keen bee keeper (handy) He’s extracted our first batch of OLDSTEAD HONEY and its delicious!! 🐝😍 Keep an eye out for honey on the menu this winter 👀

See More| NEW DISH | Oldstead Onion & Gooseberry. • Onions from the farm sat in gooseberry and apple juice combined with Lemon verbena, Chamomile and Lavender then split with a Elderflower oil. Topped with Gooseberries coated in lovage vinegar.
