De los restaurantes mas clásicos de la ciudad, una lista de comida típica que nos deja boquiabiertos y deseosos de poder probar mas; la mejor pizza en horno de leña de la ciudad, el mejor rissotto también.
Hablar con su propietario quien es pizzaiolo; un italiano de cincuenta y tantos años que con su acento y su sazón complementan el ambiente perfecto de Trattoria. (no olvide probar el espresso) Buon Apettito.

Este restaurante se encuentra bien ubicado, cerca de la calle larga. Pedimos tres pizzas que estuvieron bien pero en realidad lo que más nos gustó fue una tabla de quesos y jamones importados. Además ordenamos copas de vino de la casa, Bicicleta Carmenére 2015, el cual es muy rico.

Here we tried cannelloni ricotta e spinaci (egg noodle sleeves filled with ricotta and spinach), and filetto boscaiola (beef fillet with mushrooms). We shook hands with the owner, who is from Milan and speaks fluent Italian. Graciously he added an appetizer as a courtesy: three tasters with funghi sott'olio (marinated mushrooms), peperoni piccanti (hot bell peppers sauce), and salsa verde (tangy parsley sauce). My bar for Italian food is impossibly high (I was raised there). That stated, the tasters were very good (a rare endorsement from me), and the entrees were OK--conditionally. It's very difficult to find good beef in Cuenca; this was no exception, even if the mushrooms were alright. The cannelloni tasted OK, but on an absolute scale somewhat ordinary. Price was reasonably in line with a medium-fancy eatery in Cuenca. The menu offered "sogliola" (sole), translated as "tilapia." When queried, the owner confirmed it was tilapia. Did not try it.
