Built in a restored Ottoman madrasa (theological institution) and part of what was once known as St Nicolas Cathedral (since 1571, known as the Lala Pasha Mosque), Ginkgo aims to represent, through its menu, the historical legacies of those who have passed through Cyprus over the centuries.
