Throughout Mexico you can find a taquero (person who makes tacos) carving succulent pork straight from the tromp (rotisserie)
into a fresh warm tortillas.
There are some mixed stories of how tacos Al Pastor came to be, but the most prevailing story of all is that the Lebanese who migrated to Mexico many moons ago influenced the local cuisine with their shawarma style of cooking.
Cedro's translated from Spanish means Cedar, as the Cedar tree is the symbol of Lebanon so it shall be the name by which these tacos will be remembered by.
After many years and many tacos, Al Pastor has become a signature dish for many restaurants a street vendors alike. Being of Lebanese decent and having such love for Mexican flavours,
