It's such a shame, Pierre Hermé, that you are still using battery eggs in your pastry and have no concern at all in animal suffering. These poor hens live a miserable life in tiny cages, never feel the soil or see the light. Their suffering is the taste of your pastry.
I will never go to a cake shop which doesn't use outdoor eggs !

We deplore Pierre Hermé's lack of public commitment to exclude eggs from cage hens. These animals live a hell. You can put an end to it by choosing eggs of hens raised in the open air.
The pastries won't be perfect as long as the are made with eggs from chickens living in cage.
Please stop supporting the cruelty of cages ! Hens deserve better. Thank you.
