    We call this one 'Stuff n Run'! It has curry and plantain - her favourites. My sister @laavaroyal has intense focus when she's working, and sometimes she won't eat until everything is done. Who can relate?? βœ‹ Well, it drives me insaaane!! So in attempts to save her from gas pain, I try different combos that can serve as breakfast or lunch, having or going! . . . Here's the recipe for a hearty *Cilantro Chickpea & Plantain* filling: 1 3/4 c cooked chickpeas... 1 large plantain, cubed 5 cloves grated garlic 3/4 cup chopped scallion 1 chopped onion 1-2 tablespoons curry powder 1 tablespoon coconut oil 1/2-1 cup coconut milk lots of fresh cilantro pinch of grated ginger salt and pepper, to taste . . . Add all ingredients except the coconut milk and fresh cilantro to a food processor, and pulse a few times. OR, use a fork and your hands. Mix in the cilantro at the end.     This Quinoa Black Bean Salad was inspired by one I tried in an airport that was begging for seasoning.

    If you can, cook the quinoa in coconut milk. How much? Try a 2:1 ratio of liquid to grain. Remember that as a general guide, with a sprinkle of intuition!

    To make the salad: mix in the greens, beans, carrots, purple cabbage, purple onion, fresh thyme, cilantro, garlic and chili powder, nuts & seeds.

    Step 1: Steep a bundle of lemongrass (mint or rosemary) in hot water. I do it overnight but not with rosemary because it can get bitter. Step 2: Add a squeeze of lime/lemon and cool. Opt.: Add fresh fruit or sweetener of your choice.

    Being in the kitchen helps me travel to all the faraway places I hope to visit one day, like Morocco. Mexico and India too. By now I've tried quite a few different recipes, and you know what? Cumin is a popular spice. It's a staple in many cuisines, including those of the countries I just mentioned, and sometimes people use it medicinally. I jus love it - both cumin seeds and ground. Here's one of my favourite, quick bean salads with a likkle Mexican flair. β€’ β€’ β€’ ** MEXICAN-...INSPIRED BEAN SALAD ** 11/2 cups black beans 11/2 cups red peas 1 green bell pepper 1 red bell pepper 1 cup corn chopped red onion, optional 1/4-1/2 cup olive oil 1/4-1/2 cup balsamic vinegar 11/2 tbsp lime juice 3 cloves grated garlic 1/4 cup fresh cilantro 1/2-1 tbsp ground cumin 1/2 tsp chili powder salt & pepper, to taste β€’ β€’ β€’ Goes great in tacos, on a bed of greens with roasted plantain or by itself. Make it ahead of time and pack it for a #fibre and #protein rich lunch.

    Both incredibly simple and amazingly complex, that's a day in the life of herbs and spices. They don't even need much space to grow! β€’ There's still time to get your #herb garden up. I got dirt from Jamaica Bauxite Institute on Old Hope Road. Hope Gardens sells it too, as well as small plants to get you started.
